El Salvador - San Francisco #2

Background

Finca San Francisco is a large farm of 294 hectares, divided into several plots or “tablones” that are located at a range of altitudes, from 1200 to 1700 masl. Cherries from each of these plots are separated so that improvements can be made to picking and processing. Nordic Approach has worked with Jose since 2011 to implement lot separation and quality improvement. The purchases made are grown at higher altitudes, where coffee is difficult to grow but quality is high. Jose and his sons are committed to social responsibility and sustainability, and his farming philosophy is that “Everybody has to do their part”. At Finca San Francisco, the quality of cherry-picking is impressively uniform and ripe. Nordic Approach’s purchases undergo a ten-hour soak overnight before drying, which results in a more elegant and cleaner cup, with more distinctive acidity and a longer shelf life as well.

This is our first purchase from El Salvador, and it is such an elegant, silky coffee. Jose’s washed geisha is soft and full of pink fruit tones, with a gentle mouthfeel and classic floral aromatics that geishas are so well-known for.
