Background
Hacienda Sonora is a family farm located in the Central Valley of Costa Rica at the foot of the Poas Volcano in Carrillo, Alajuela. It is run by Alberto Guardia, a fourth generation coffee producer, and his family. The farm is blessed with prime coffee-growing conditions, with a diverse ecosystem and rich volcanic soil.
The farm has a long history of caring for the environment. They only carry out natural and honey processes, in order to save 3 gallons of water per pound of coffee that would be used in washed processing, and the farm is fully powered by renewable energy sources.
We love exploring new varietals and cultivars. For this milk espresso, we chose a hybrid variety, Centroamericano, released in 2010, which is a cross between Sarchimor and Sudan Rume. It is highly resistant to rust disease, and has a complex flavour profile.
In milk, this coffee is packs a rounded mouthfeel and a fruity punch, with a dense chocolaty sweetness that we enjoy!
