Ethiopia - Gedeb #5

Background

Gedeb #5 is a classic, washed coffee from the Gedeo region of Ethiopia. Alemayahu Tilahun processes ripe red cherries from local farmers at his washing station. This coffee was manually sorted to remove under-ripe cherries, then depulped and fermented, then dried on African raised beds for 12 days.

We wanted a clean and more traditional tasting coffee from Ethiopia this season, in contrast to the slew of naturally processed coffees we purchased for our menu. This coffee ticks all the boxes: sweet citrus acidity, ripe red berries, and the unmistakable floral aromatics that belong to a washed heirloom coffee from Ethiopia.
