Brazil - Donizetti Cardoso

Background

We had the privilege of meeting Felipe Croce, whose family owns and runs Fazenda Ambiental Fortaleza (meaning “Environmental Fortress Farm”) since 1850, in Singapore last year for the first time. We were already familiar with the coffees from FAF, but Felipe’s passion for quality and growth in coffee production in Brazil is infectious in person. FAF is not only a coffee farm. They also work closely with fellow producers to share coffee knowledge and improve production quality. We decided to purchase 2 coffees from FAF to showcase on our milk espresso programme. This second coffee comes from Donizetti Cardoso and it is a natural yellow bourbon. We chose this varietal for its gentle yet sweet acidity and big mouthfeel.

This is a perfect example of a “comfort cup”, with classic flavours that we feel pair best with milk.
