Alo - Special Washed

Background

This is truly an excellent coffee from Alo Village! For this coffee, Tamiru’s focus is on evenness. The ripe coffee cherries are placed into barrels, which are sealed and laid down on their side rather than upright, so that fermentation can occur evenly across the entire collection of cherries. The fermentation is done for 3 days and then the cherries are depulped and dried in very thin layers on raised beds for a highly controlled drying stage that limits and stops further microbial activity.

This coffee is such a delicious reminder of why we love washed Ethiopian coffees: it’s bursting with peach, berries, and floral flavours together with a juicy mouthfeel that holds up from hot to cool. Enjoy this slowly and while it lasts!
