We waited 5 years to get our hands on Diego’s coffee and finally, this year, thanks to our dear friends at Nylon Coffee, we managed to purchase a small amount of Pacamara and Bourbon from Los Pirineos. Diego Baraona is a young producer who took over his father’s legacy when he passed away in 2020. It was an immense challenge for young Diego to step into his father’s shoes, but from what we have seen, heard, and tasted, we are so happy to see Diego coming into his own as a quality-focused coffee producer with vision and drive.

The Bourbon varietal from Los Pirineos is world renowned. This coffee is a great representation of the Bourbons grown at Diego Baraona’s farm, with a huge chocolaty flavour like the Bourbons grown in Brazil, but with more fruit flavour, albeit still relatively low in acidity. Gilberto, Diego’s father, named these Bourbon trees “Bourbon Elite” because the plants are very old and thought to be the original Bourbon trees grown in El Salvador. This is a mainstay from Los Pirineos, and it’s a great daily driver that’s easy to enjoy.
