La Villa sits at 1670 metres above sea level and enjoys a naturally blessed location for coffee-growing with breathtaking mountain views. It is run by Eduard Gaviria, who inherited the land from his father. This is our first Papayo purchase and this coffee really won us over with its complex fruit tones and intense sweetness.

Papayo is a relatively rare and exotic varietal grown mostly in the Huila region of Colombia. It has an unusually large bean shape and is quite dense. It is said to be a mutation of pink bourbon. Eduard’s Papayo is a process-driven coffee - there is a prominent winey flavour that reminds us of black forest dessert and a ripe and sticky acidity to balance out the sweetness in the cup.
