This is a world-class coffee from Tamiru Tadesse’s Chilaka washing station in Sidama. It’s super sweet and distinctive, and you’re in for a treat with this one. With a longer fermentation time of 240 hours, the coffee definitely carries the processing flavour of a (just very slightly) boozy natural, but the fermentation was done very well and there are no off flavours at all. Instead, the coffee is well-balanced and highly aromatic, with a syrupy mouthfeel and cooked fruit sweetness that holds everything together
