Samii Chelbesa Danche Organic #2 is our final Ethiopian release for 2022 and we’re so excited to share this coffee with you. It’s sweet, bright, perfumey, and elegant - all the qualities that made us first fall in love with washed Ethiopian coffees.
The farmers of Danche washing station allow the coffee cherries to ripen well before they harvest, enhancing its sweetness.
The station manager, Girum Assefa, pays careful attention to site management and coffee processing. These details no doubt contribute to this coffee’s layered complexity.

Samii Chelbesa Danche 101

Washed, from Gedeb, Ethiopia.

  • As an espresso:
    Honey-like sweetness, medium acidity like orange citrus fruits, undertones of ripe white peach, florals like white and pink flowers.

    Brew ratio of 2.4

    • 20g dry coffee in

    • 47 - 48g liquid espresso

    • 60 - 65 secs

    With milk:
    1:3 ratio of coffee to milk

  • As a hot filter:
    Layers of floral and fruit, with a tea-like mouthfeel

    We use a flower dripper, similar to V60

    • 15g of coffee

    • Medium grind size

    • 260g brew water, in 3 pours

    • 110g bloom > 80g > 50g
      (20 second intervals in between each pour)

  • As an iced filter:
    Refreshing and crisp acidity, aromatic tea-like flavour.

    We use a flower dripper, similar to V60

    • 15g of dry coffee

    • Grind slightly finer than how you would for a hot filter!

    • 90g ice in decanter

    • 160g total brew water, in 3 pours

    • 80g bloom > 60g > 20g
      (20 second intervals in between each pour)

    • Serve over 3 cubes of ice
