This coffee is named after Marysabel Caballero, even though both her and her husband Moises Herrera are the creators behind this beautiful coffee. Marysabel and Moises are rockstar producers in Honduras. The couple have been responsible for improving the reputation of Honduran coffees with their hard work and persistent focus on quality and sustainability.

This lot is washed, and is a blend of smaller pickings but its quality can easily compete with coffees from a single block or farm. We’ve been looking forward very much to having this coffee with us, having first fallen in love with the Caballeros’ coffees early on in our journey incoffee.
It’s a classic example of a well-structured, sweet, clean and incredibly balanced washed coffee that shines both on its own or with milk.

PRESENTING: Caballero Jr #1 – the #4 coffee we’ve roasted in our coffee roasting journey. A classic, structured washed coffee.

  • As an espresso:
    Medium body, round mouthfeel, smooth texture.

    Cooked red apples and plums, chocolate, blanched hazelnuts and hojicha.

    Brew ratio of 2.4

    • 20g dry coffee in

    • ~48g liquid espresso

    • 65 - 70 secs

    With milk:
    1:4 ratio of coffee to milk

  • As a hot filter:
    Light bodied, tea-like mouthfeel, smooth texture.

    Fresh red apple, plums, golden raisins, hojicha.

    We use a flower dripper, similar to V60.

    Brew ratio of 1:17 - 17.3

    • 15g of coffee

    • Medium grind size

    • 4 pours, total brew time of 3:30 min
